Using mainly organic ingredients, but also wild herbs and fruits, Bojesen’s award-winning head confectioner, Tor Stubbe, makes cakes, desserts, and confectionery on a daily basis.
At a first glance, the shabby building on Ingerslevsgade near Kødbyen in the heart of Copenhagen does not look very impressive. However, once inside this busy confectionery, everything is a hive of activity: whipping chamomile mousse, peeling pears for tarte tatin, and preparing cake bases for the Opera signature cake. Machines are whirring while staff are tasting old apple varieties or wild Swedish blueberries in preparation for the cake selection for the Tower restaurant at Christiansborg Palace.
